Hungry in Rome? The Supplì recipe!


You can not miss the SUPPLI‘!

Typical romans rice croquettes stuffed with mozzarella, if half-open, remain attached by a wire cheese … like a “telephone wire”! That’s why they were called  “SUPPLI’ on the phone”.

That’s the recipe

Sauté the onion in 2 tablespoons of extra virgin olive oil, add the ground beef and brown, pour the wine, raise the heat to evaporate the alcohol.

Add the half boiled rice and brown for a few minutes, add the tomatoes, salt and pepper.

Cook over a low heat, the sauce should simmer, at the end put  the rice to cool on a flat surface.

When the rice is cooled will take a small handful and form a meat ball oblong, drill a hole with your finger, inside which you put a strip of mozzarella, which have previously squeezed to release the whey.

Pass the rice balls obtained, first in flour, then in beaten eggs and finally in breadcrumbs.

Fry the croquettes in abundant hot oil, so they cook on all sides!

When cooked, dry the excess grease with paper towels.

Serve the Supplì very hot!!!
