Pasta Gamberi and Zucchine

Pasta, of your choice, preferably short and handmade, ( I will teach how to do you on another Post!) with Gamberi and Zucchine.

For 4 people:  20 fresh large raw shrimp, olive oil,  2 zucchini, garlic, 4 red tomatoes, fresh parsley, Parmesan cheese, lemon juice, salt and pepper. 

The Recipe

In pot of boiling water, cook the pasta about 10/15 minutes, drain. The pasta should be firm!

For the sauce:

in a large skillet, heat the oil well, fry the zucchini julienned about 3 minutes and put them in a large bowl.

Cook the shrimps and garlic in very hot oil for few minutes, add  tomatoes and continue cooking.

Add shrimp in the bowl with the zucchini , and mix with hot pasta. Add parsley, Parmisan cheese, lemon juice. Season with salt and pepper to taste.
